Crazy week

It has been a crazy week and I know that there are many many things more important than a little blog.  I work in healthcare, so my job is considered essential, so I've still had to work in the midst of all this social distancing and probably will continue to do so unless drastic measures happen.

It is a week after finishing a challenge which usually means I allow myself some treat meals, but try not to go too off track.  Unfortunately hormones plus the uncertainty in the world is making things harder, especially since Monday night all the gyms were told to close for at least 2 weeks, possibly longer.  Luckily the trainers at Cuse Camp have been posting workouts for us every morning, so I can at least get a workout in.  Unfortunately where I do kickboxing isn't doing the same, but it is mainly a Brazilian Jujitsu place, and they are posting workouts for the BJJ students.

I'm a big meal prepper, on Sunday I usually prepare something which will be my lunch for the week, and dinner tonight (depending on what I am making.  If it's salad then I get get all the veggies ready to throw together all week and make myself something else.) Sometimes I also make an egg bake or something for the week's breakfasts as well. Today I made a crockpot full of chili.  It's an easy and filling meal.  It's also nice because the weather here is chilly-- the sun is out, but the temp is in the 30's.  Makes me feel like I should work outside, until I go out and realize how cold it is.

Here's the recipe, it makes 6-8 servings, depending how generous the portion sizes are.

Chili

1lbs (or more) Ground turkey (or ground beef)
1 Onion-chopped
1 Pepper chopped
2 cans Chili beans in sauce
2 cans Diced tomatoes
Optional 1 can Kidney beans

Brown the ground turkey with the peppers and onions (today I threw in 2 peppers to add more veggies and color)  Place everything in a crockpot and cook on low for several hours-- you are really just heating everything through.  I sometimes put in some chili powder, I may have used some cayenne today as well.  I usually serve it with some cheese on top.

It's kinda a nice comfort meal during these crazy times.  Try to find some normalcy in these times.  Keep up some sort of routine, do something fun and / or active.  Take a break from the news or avoid it for a while.  We will get through this.
